A Fall Favourite

For this fall treat, you will need
10 large apples
1 cup of butter
1 1/2 cups flour
1 cup of brown sugar
2 tbsp cinnamon
10 HobNob Oatmeal cookies rolled out
If HobNobs aren't available where you live, I suggest another oatmeal digestive biscuit.
Peel, core and slice apples. Try not to cut your finger if using a mandoline which is what I did as soon as I got started. Fortunately my husband was home and could finish the job for me.
Add 2 tbsp of cinnamon and 1/4 cup of your brown sugar to the apples and mix thoroughly.
Place your cookies in a ziploc or food processor and crush until coarse.
In a large bowl, mix together the remainder of your brown sugar, butter, flour. The best way to do this is with your hands but of course it's up to you. Just be sure to mix well.
Add your crushed cookies to the mix and mix some more til crumbly.
Place apples in a 9x13 baking dish and add generous amounts of crumble mixture to the top.
We enjoy it the best hot out of the oven with vanilla ice cream. Try it, you won't regret it

Happy Pancake Day

Happy Pancake Day! We eat a lot of pancakes around our house and thought today would be the perfect day to share our recipe for what we think are the best Buttermilk Banana Pancakes.

In a medium bowl, mix together...
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Make a well and add...
1 large egg
1 cup buttermilk
2 tbsp oil
1 tsp vanilla

Mix well until smooth and then add 2 mashed bananas. Cook on a lightly greased fry pan or griddle flipping pancakes after they fill with bubbles. Serve with fresh fruit, syrup, whip cream, chocolate chips, nuts or whatever your heart desires. Enjoy!

Did you eat your pancakes today? We've celebrated the last three years straight but really only because we LOVE pancakes and this is just another excuse to eat them. On the menu this morning was a short stack of banana pancakes each. What a great way to start our mid week morning.  Read more about Shrove Tuesday here. Our family is all #8!
Here's my recipe. Not the healthiest but makes a great cake every single time. Enjoy!
