A Fall Favourite

For this fall treat, you will need
10 large apples
1 cup of butter
1 1/2 cups flour
1 cup of brown sugar
2 tbsp cinnamon
  10 HobNob Oatmeal cookies rolled out
 If HobNobs aren't available where you live, I suggest another oatmeal digestive biscuit. 
 Peel, core and slice apples. Try not to cut your finger if using a mandoline which is what I did as soon as I got started. Fortunately my husband was home and could finish the job for me. 
 Add 2 tbsp of cinnamon and 1/4 cup of your brown sugar to the apples and mix thoroughly.
Place your cookies in a ziploc or food processor and crush until coarse.
In a large bowl, mix together the remainder of your brown sugar, butter, flour. The best way to do this is with your hands but of course it's up to you. Just be sure to mix well.
 Add your crushed cookies to the mix and mix some more til crumbly. 
Place apples in a 9x13 baking dish and add generous amounts of crumble mixture to the top.
We enjoy it the best hot out of the oven with vanilla ice cream. Try it, you won't regret it
